Dark molasses is a sweetener that people have used since the 10th century to flavor food and drinks.
We made dark molasses from sugar cane by boiling it down to syrup so that people could use it as an alternative for honey, maple syrup, or white sugar.
While there are many types of molasses, dark molasses boasts the most preference.
This is because it doesn’t have a strong taste, which allows other flavors in your dish to come through more prominently.
Where Is Dark Molasses In The Grocery Store?
You can find dark molasses in the baking aisle.
You can also known dark molasses as blackstrap molasses or sometimes Barbados molasses.
They are thicker, darker, and bitter than regular molasses. They have a rich flavor that works well in coffee cake recipes, gingerbread, bar cookies, and quick bread.
And if you’re lucky enough to find it in your grocery store, try using the absolute best by date on the bottle when you use it.
Dark molasses can ferment in time, so older bottles aren’t always better for flavor.
Also, dark molasses is not vegan because it contains an enzyme called animal-type glycol-protease.
Making it unacceptable for vegans who avoid products containing animal ingredients or byproducts.
Can You Freeze Molasses?
Yes, it’s possible to freeze molasses. Molasses is a thick syrup from certain sugarcane plant parts boiled down into a dark brown substance.
It has a unique taste that other sweeteners can’t replace.
The first thing you would want to do is plan on freezing. Make sure it’s pure molasses and not something else.
The only way to ensure this is to read the label of the product before buying it.
If you find molasses listed as an ingredient, then it’s safe to say your bottle or jar of syrup is pure molasses.
You might also consider checking with the manufacturer to be extra safe, that the product contains nothing but straight-up molasses.
Once you know for sure what you’re working with, check out these tips on how to best freeze your molasses:
-Make sure your container doesn’t have too many air bubbles
-Don’t fill the jar or bottle to the brim; leave a bit of space
-Place a piece of plastic wrap or wax paper over the top before screwing on the cap and freezing
Once you’ve followed these steps correctly, you can quickly freeze your molasses. If you plan on using it within six months, there’s no need to thaw it before use.
However, if you plan on keeping it around longer than that, thaw it in the refrigerator overnight.
Then bring it back to room temperature naturally by setting it out on the counter for an hour or two.
You can also heat molasses in small batches to liquefy again after freezing. Just place one cup at a time in a saucepan and heat over medium-low flame, stirring constantly.
Please do not allow the mixture to come to a boil, or else you will ruin it.
Once you have your molasses liquefied again, if need be, you can store it in the refrigerator for up to three months or continue freezing as desired.
Is Grandma’s Molasses the Same as Blackstrap Molasses?
No. Grandma’s molasses and blackstrap molasses are both types of cane sugar molasses.
They’re made from boiling down the juice from crushing sugarcane to extract the natural sugars, which are then boiled again with water and added minerals to create a syrup.
The difference between them is how they’re processed:
Grandma’s molasses is less refined because they go through only one boiling process.
While blackstrap molasses has gone through two or more boiling, making it even thicker and darker than regular brown sugar.
It’s surprising to learn that there are differences between grandma’s homemade recipe for sweet tea versus what you find at your local grocery store.
But if you want something healthier than the standard commercial molasses, there are options.
I prefer Grandma’s molasses for baking because of its mild flavor and moisture content, but you can substitute either for most recipes.
Because it’s less processed than blackstrap molasses, grandma’s molasses contains more nutrients like calcium, magnesium, potassium, iron, and Vitamin B6.
Some people even claim that the health benefits of this type are much stronger than regular blackstrap molasses because it has not been through as many processing stages.
Blackstrap molasses also has a wide variety of uses outside of baking.
You can use it to make homemade salad dressings or healthy barbecue sauces, or even as an all-natural sweetener in your tea or coffee.
You’ll still get all the same nutrients as grandma’s molasses, but with a much stronger flavor.
What Can I Use In Place Of Molasses?
If you’re looking for an alternative, try using brown sugar or white sugar as a substitute.
The molasses you buy in the store is typically blackstrap (made from sugar cane) or sulphured light (made from sugar beets).
Blackstrap has more vitamins and minerals than light molasses, but people often use it as a sweetener because it tastes sweeter.
Light molasses: Use 1/4 cup less than the recipe calls for, and remember that baked goods made with white sugar rather than brown sugar will be lighter.
Brown Sugar: Brown sugar is just granulated white sugar combined with molasses.
So you can use it as a substitute by using 1/4 cup less than called for and possibly increasing the baking time slightly.

No! Blackstrap molasses doesn’t go bad. The shelf life of blackstrap molasses is the same as sugar’s shelf life (about one year).

Best By Dates aren’t an expiration date as they are a time limit for peak freshness.
Keep them sealed tightly and store your food in an air-conditioned space away from direct sunlight to ensure proper freshness.
Once opened, put it in the refrigerator or freezer to extend its life even longer.
These dates are primarily for warding off food-borne bacteria that multiply rapidly at room temperature.
Under proper storage conditions, it can last well beyond the Best By Date – but you would be more likely to notice its mediocre flavor before then.
It’s not recommended to keep it past two years, though, because of the risk of botulism via the airtight seal becoming compromised.

But as a last-minute ingredient for cooking dinner, I went there from work one night, and molasses was the only type of sugar they had.

I have always associated molasses with being a part of cane or granulated sugars, but not so much in the baking aisle.
Maybe that’s because I’m usually at Publix here in Florida when I need sugar for cooking dinner on busy weeknights.

Does Walmart Sell Real Maple Syrup?
Walmart does not sell real maple syrup. They sell “maple-flavored” syrup.
The difference is in the list of ingredients and how they make maple syrup.
Maple-flavored syrup contains two ingredients; high fructose corn syrup (HFCS) and caramel color.
HFCS is water, sugar (in this case, mainly fructose), preservatives, and flavoring – in that order of concentration.
Caramel color is usually burned sugar, with many carcinogenic properties in its concentrated form. It provides the most flavor for this type of fake maple syrup.
Maple syrup is sap from a tree. They boil the tree to evaporate excess liquid without burning or charring it.
The flavorings used are vanilla extract (for more authentic maple) and sometimes maple sugar or molasses to enhance the flavor.
Maple syrup boasts a natural product with no preservatives, colors, or added sugars. As a result, Walmart is selling fake maple syrup.
However, Walmart does not sell real maple syrup in mass quantities because it does not keep for long without proper refrigeration.
For many people who enjoy the taste of this sweetener, this is not an issue since they use such small amounts at a time.
If you want to buy real maple syrup and don’t mind keeping it in the fridge, try asking your local grocery store if they’ll carry it.
Walmart sells pure Canadian Maple Syrup (meaning that they must research and effort into finding suppliers).
Still, it’s always best to give locally based companies (and smaller ones like family farms) your business.
Otherwise, farmers may end up losing agricultural diversity and local food traditions in favor of large-scale agriculture.
You can also purchase your very own taps to collect the sap from maple trees yourself without harming them.
Remember that you’ll need a giant bucket for this, but it’s a gratifying project to undertake with friends or family members.
